Despite the warming days I still love to bake in summer, and my seasonal cake recipe for this month is a summer honey cake-a celebration of the busy bees, the golden hues and the sweetest of the month.

Honey Cake Recipe

300g gf self rasing flour

3 eggs

100g dark muscovado sugar

225g butter

250g runny honey

Set an oven at 140C or gas mark 3

In a pan melt the butter then add in the honey and sugar, stir well unril the sugar has melted. Do not boil. Remove from the heat.

In a large bowl beat the eggs and honey mixture together. Sift in the GF flour and fold the flour in. Pour into a lined 20cm cake tin and bake for 1 hour until the cake is fully cooked.

The cake can be glazed with warm honey and decorated with calendula flowers and little sugar paste bees. Nigella Lawson also has a delicious recipe for a chocolate honey cake which you can find for free on her website.
