Autumn Apple Cake Recipe

Could there be a more autumnal recipe than Apple Cake, after baking this delicious cake I’m going to say probably not.

The smell of baked apple, caramelized sugar, melted butter and cinnamon that pervades throughout the house makes this a worth while make for the scent alone but then there’s the taste…

A bit like a flapjack thanks to it’s buttery, sugary top, but with a melt in the mouth like texture similar to carrot cake and then with a whole lot of crumble flavour, Apple Cake is my new favourite thing.

To top this recipe off it’s really easy to make! You’ll need to chop some apples into small cubes but apart from that it shouldn’t take more than 20minutes to compile and one hour to cook.

Autumn Apple Cake Recipe

200g coarse wholemeal flour & 25g plain flour (for gluten free version scroll down)
2 tsp baking powder
1 tsp mixed spice
175g light muscovado sugar
150g salted butter, melted
2 large eggs, beaten
4 apples
A sprinkle of Demerara sugar to finish

Preheat the oven to 160C and dice four medium apples into little cubes, you can leave the skin on but remove the core. Combine the dry ingredients together in a bowl. Melt the butter, let cool and beat in the two eggs. Combine the dry and wet ingredients together in a bowl. Fold in the diced apples. Pour into a lined 20cm cake tin. Sprinkle with demerara sugar for added crunch and bake in the oven for 1 hour or until golden on top and pulling away from the sides. Let cool in the tin until warm and then gently remove and place on a wire rack. The cake will be very crumbly when warm so be gentle!

Gluten Free Apple Cake Recipe

As you know I’m gluten free and I like to make a gluten free bake every week for our farmyard cafe too. So, I obviously had to make a gluten free apple cake too! I got my husband to taste test the two and he says they’re both very similar. You are not missing out with this version!

200g Buckwheat flour

25g Doves Gluten Free self raising flour

2 tsp baking powder
1 tsp mixed spice
175g light muscovado sugar
150g salted butter, melted
2 large eggs, beaten
4 apples
A sprinkle of Demerara sugar to finish

Follow the same instructions as above. PS-these are very yummy made into muffins too! Simply reduce baking time to 25-30mins.
