Cleavers is a timely herb. Arriving in early sprin Cleavers is a timely herb. Arriving in early spring its comes as a wake up call for our body systems thanks to its cleansing effects. Due to this it is one of the first herbs of the year that encourages me to fill my basket and take it back to the kitchen. I use cleavers mainly as a infusion or as a infused oil, although in a tincture it has powerful effects that shouldn’t be overlooked. 🌱Small, young shoots can be cooked although avoid the stems and older leaves. Later in the season Cleaver’s small seeds can be dried and toasted and used as a drink as the plant is actually related to the coffee family and contains small amounts of caffeine! What do like to make with cleavers or is this a plant you’ve yet to discover?

This morning we had such a brilliant time completi This morning we had such a brilliant time completing a little spring scavenger hunt. This is one of the boys favourite things to do-they love hunting out nature discoveries on the farm! We also packed a small picnic-a couple of thermos of milk and some cookies. Although it was definitely chilly 🥶we had the best fun! Currently I’m warming up in the polytunnel and editing this while the boys make mud pies, then it’s back home to add some logs to the fire and to read some books 📚

Today we’ve been sowing tomatoes, salads, beans and onions- the season of sowing is definitely upon me now and it’ll be regular work in the garden from today onwards! I’ve put the tomatoes inside the house to germinate as the seeds will appreciate the extra heat. Everything else will be in the tunnel covered with some fleece. 🌱 what are you up to in your garden at the moment?

Well while I was out harvesting our veg this morning I thought I’d try my hand at a reel showing you how I harvest and cook them. Didn’t realise the reel had to be so short (so sorry about the editing which I did with very cold fingers!) These little girls of deliciousness are so worth growing for this time of year. 👌any Qs let me know in the comments below-I’m off to the farm shop for a warning coffee! 🥶

A cake for February. A recurring theme of late win A cake for February. A recurring theme of late winter’s Imbolc is milk. 🥛This is likely due to the sheep in the fields being almost full term, ready to birth their babies come March and April. Without birth there is no milk and spring is a time of rebirth and new life. With this in mind I find myself musing over baking with milk. What kind of cake can I make to celebrate this time of year and its connection with this particular ingredient? I found my answer in this months cake-an Imbolc Milk cake (similar to the Mexican Tres Leche cake), a mega milky celebration of vanilla undertones and white chocolate flavours. 🤤
Here's how to make it:
Heat your oven to 180C and line a 20cm cake tin. Put 4 egg whites into a bowl and add a pinch of fine salt. Beat well until the whites are foamy then add 150g of caster sugar, one tbsp at a time until it is all incorporated.

In a separate bowl, mix the 4 egg yolks with 50g caster sugar and a tsp of vanilla extract until light and slightly bubbly. Then add 200g plain flour, 1tsp baking powder and 100ml milk to the egg yolks and gently fold together.
Now add one dollop of the stiff egg whites into this mix and beat well. Then gently fold in the remaining egg whites, trying to keep the mixture light and airated.
Pour into the prepared tin and bake for about 30 minutes or until cooked through. A skewer should come out clean. Let the cake cool a little in the tin before turning it out onto a plate. Using a skewer make small holes all over the cake.

Now in a clean bowl mix together one tin of condensed milk, one tin of evaporated milk and 3 tbsp of double cream. Then gradually pour this sweet milky liquid over your cake and let it soak in for for a full day. You can decorate your cake once its fully cooled with whipped cream (which I highly recommend!).

You’ll only need a small square of this cake and it is so sweet and milky but an utterly delicious treat to see through the last weeks of winter.
