Healthy toffee apple anyone? I’m not a fan of those sugar coated apples, which may be pretty to look at but deliver a pretty crazy sugar over-load.
These date toffee apples are a tasty alternative. The toffee is amazingly yummy and works well in lots of other recipes too (hello caramel latte!).
I love the contrast of the earthy sweetness of the date caramel with the crisp apple. It makes the perfect energy boosting snake no matter what your age.
If rolling the apples in the caramel is too messy then simply quarter and core the apples and serve the caramel of the side with a sprinkle of chopped nuts. Yum!
Healthy Date Toffee Apple Recipe;
Ingredients:
4 soft pitted Dates
1/4 cup nut butter
2 tbsp melted butter
1 tbsp maple syrup
1tsp vanilla extract
Pinch salt
If the dates are a little on the hard side then soak them in some warm water overnight. Then remove the dates and discard the water.
Blitz all the ingredients in a food processor until completely smooth.
Place a lollypop stick or little twig into each apple, where the stalk sits. This will be the handle for the toffee apple.
With the back of a spoon paint on the date toffee onto each apple. Then place some chopped nuts on a plate and roll each toffee apple around until coated in nuts.
Cover the outside of each apple in the caramel and roll in chopped nuts. If not eating straight away place in the fridge. Will last for up to 5 days.
