Some of you will already know that this summer I jumped in the deep end and began to supply our onsite cafe with baked goods every week. This was kind of terrifying but also a brilliant way of learning. My goal was/is to bake with as much seasonal ingredients as possible and also make sure every recipe is delicious! These pear and chocolate scones are the perfect treat for the colder months, makes the most of seasonal pears and are tried and tested and confirmed yummy! Hope you enjoy these too!

Pear and Chocolate Scones Recipe

Ingredients;

3 medium pears (not too soft)

190g self raising flour

50g caster sugar

1 1/2 tsp baking powder

pinch salt

85g butter

60ml double cream

1/2 bar green & blacks 70% dark chocolate chopped into chips.

I egg-beaten

Method

Peel and de-core the pears and chop into small cubes. Place in a baking tray and roast in the oven at gas mark 5. This usually takes about 15 minutes but you’ll want to keep an eye on them and take them out when the pears are looking a little golden on the edges and drier. Remove from oven and let cool completely.

Mix the flour, sugar, baking powder and salt together in a large bowl. Cube the butter and rub into the flour mix until like fine breadcrumbs. Mix in the cream, beaten egg, pears and chocolate at the same time until just combined and dough like. Don’t over mix.

Place dough onto a floured surface and shape into a round circle that’s about an Inch thick. Divide this circle into 8 sections (a bit like pizza slices) place these onto a floured baking tray with plenty of space around them and bake at gas mark 5 for 20mins or until golden on top.
