Sometimes there’s nothing better than a chewy, sweet chocolate cookie.

Especially when it’s teamed with a glass of milk or cup of tea to dunk it into and a toasty log fire and a Harry Potter movie.

Chewy Chocolatey Spelt Cookies Recipe

This spelt cookies recipe are perfect for chocolate lovers-they have that textbook cookie texture but combined with a fruity kick and moreish crunch from the divine cocoa nibs.

I’m not going to pretend that these delicious cookies are particularly healthy. Sure, they contain good ingredients; spelt flour, butter, good quality cocoa, cocoa nibs…But they also have a good dose of unrefined caster sugar to give them that unbeatable cookie texture.

Ingredients:

125g Soft Butter

100g Unfined Golden Caster Sugar

75g Soft Light Brown Sugar

1 Egg

2 tsp top quality Vanilla Extract

100g White Spelt Flour

50g Cocoa Powder (Green & Blacks)

½ tsp baking powder

Pinch salt

100g Cocoa Nibs

 

Method:

Preheat the oven to 180. Line a baking tray with greaseproof paper.

Add all the sugars into a mixed bowl. Melt the butter and then pour over the sugars. Beat well. Add in the egg and the vanilla and mix well.

Sift the flour, cocoa powder and baking powder into a bowl and add the salt and cocoa nibs into the liquid mix. Stir well.

On a lined baking sheet dot tablespoons of the mixture onto the sheet, leaving enough room for the cookies to spread out. Place into the preheated oven for up to 10 mins or until baked.

Remove from the oven and let cool for a few minutes before letting cool on a wire rack.
